It begins here
A new chapter begins.
Last year, I started a blog on my Instagram, documenting my travels daily. That collection of stories has now evolved into my first publication—The Edible Next—set to launch at the end of 2025.
Right now, I’m in Trondheim, Norway, staying with my aunt for the next three weeks before my next expedition. During this time, I’ll be sharing a mix of recipes, experiences, photos, and videos—offering you a firsthand look before they take shape in my book.
This journey began in New York City, where I spent four whirlwind days with a photographer friend from St. Louis. Cold mornings, biting winds, and warm afternoons spent creating—musing over art, riding endless subways, and walking until my heels wore thin. One morning, hesitant but curious, I tried mushrooms for the first time—a microdose blended into our smoothies to heighten creativity and push us through the city’s relentless pace. Four days in New York feels like four minutes, but I made the most of it—climbing to the top of the Empire State Building, devouring a bowl of ramen bigger than my head at Ivan Ramen, and capturing every moment I could.
On Wednesday, I left for Norway—nine hours in the air to Oslo, where I booked a hostel for a quick shower and nap before taking the night bus to Trondheim, an eight-hour ride through the darkened landscape.
This morning, I arrived—exhausted, delirious, but home for now. A long nap, a homemade dinner with family, and a deep breath.
